Every bag of specialty coffee carries a story — of a place, a season, and the hands that brought it to life. Our Burundi Kayanza Washed Microlot is one of the most expressive coffees in our current lineup, and understanding where it comes from makes every cup more meaningful.
The Origin: Kayanza Province, Burundi
Burundi is a small, landlocked country in East Africa, nestled between Rwanda, Tanzania, and the Democratic Republic of Congo. Despite its size, it produces some of the most distinctive coffees on the continent. The Kayanza Province, in the north of the country, sits at elevations between 1,700 and 2,000 metres above sea level — high enough for the slow cherry maturation that builds complexity and sweetness in the bean.
The region's volcanic soils, consistent rainfall, and cool nights create ideal growing conditions for Bourbon and Jackson varietals — the two heirloom varieties that dominate Burundian coffee production and are responsible for the cup's characteristic brightness and fruit-forward character.
The Washing Station
Burundian coffee is typically processed through centralised washing stations, where smallholder farmers — many tending fewer than 200 trees — deliver their freshly picked cherries for processing. The washing station plays a critical role in quality: careful cherry selection, controlled fermentation, and meticulous drying on raised beds all shape the final flavour profile.
Our Kayanza microlot is sourced from a single washing station, allowing for full traceability and consistent quality from harvest to roast.
The Process: Washed
Washed processing — also called wet processing — removes the fruit skin and mucilage from the coffee cherry before drying. This produces a clean, transparent cup where the bean's intrinsic character takes centre stage, unmasked by the influence of fermented fruit.
For Kayanza, this means the terroir speaks clearly: the volcanic soil, the altitude, the varietal. The result is a coffee of exceptional clarity.
What's in the Cup
Expect a bright, complex cup with notes of citrus — lemon and orange zest — alongside stone fruit sweetness (think peach and apricot) and a silky, medium body. The finish is clean and lingering, with a gentle acidity that lifts the cup without sharpness.
This coffee performs beautifully as a pour-over or filter brew, where the washed processing and high altitude shine. We recommend a medium-coarse grind, 93–95°C water, and a 1:15 ratio as a starting point.
Roasted to Order in Malta
At Black Eye Artisan Coffee, we roast every bag to order. Your Burundi Kayanza is roasted fresh and shipped with the roast date on the label — so you know exactly when it was roasted and can plan your brew window accordingly. For filter brewing, we recommend waiting 5–7 days post-roast for the CO₂ to settle and the flavours to fully open.
